Veggie burger is a must

One of the biggest things and the first thing my husband gave up was hamburgers. He was a big fan and loves them. I know it was a big struggle for him to stop eating them. Since he stop eating them for several months, before giving up meat all together.
I went to look at several recipes that could make him happy again about eating a hamburger but without eating meat again. It wasn't easy but several veggie recipes where made out of black beans, sweat potatoes, etc. That was great news, since he really likes black beans and sweat potatoes.
I started my task and here is the result. It turned out pretty good and is one of his favorites, big accomplishment for me.
Black beans veggie burger

INGREDIENTS:
2 cups black beans
2 tbsp oil, separated
1 onion, sliced
1 cup spinash leaves
1 tomato sliced
3/4 cup panko bread crumbs
1 egg
salt and pepper to taste
1 tbsp brown sugar and vinegar or beer.

DIRECTIONS:
To prepare the beans:
You can use canned beans, if this is the case drain and rinse them.
I prefer to prepare them in a slow cooker. To do this prepare them the night before.
Put 2 cups of dried black beans with 4 cups of water. Add salt and pepper to taste, and an epazote leaf. Put on low heat for about 8 hours.
When the beans are ready, drain them, put in a bowl to smash them thoroughly.
To prepare the patties:
Put the smashed beans in a bowl, add the bread crumbs, egg, salt and pepper.
Combine the mix and start making little patties.
In a pan heat the oil on medium. Place the patties in and cook them for about 5 minutes on each side, or until browned.
To prepare the caramelized onions:
Put oil in a pan at medium-low heat. When the pan has been heated add the sliced onions and stir them frequently. When they are starting to get soft add the brown sugar and a little vinegar or beer. To get the brown bits of the pan and onions to caramelize. Heat them for a good 20 minutes.
TO SERVE: Toast the hamburger bun, place the bean patty, add spinach leaves, tomato, and the onions. You can add cheese, mayo, mustard, etc if you want.
Also you can pair it up with herb potatoes, or french fries as you wish.
Hamburguesa vegetariana de frijoles negros
INGREDIENTES:
2 tazas de frijoles negros
1 hoja de epazote (si se van a cocinar los frijoles)
2 cucharadas de aceite
1 cebolla rebanada
1 taza de hojas de espinaca
1 tomate rebanado
3/4 taza de pan molido
1 huevo
Sal y pimienta al gusto
1 cucharada de azúcar mascabada
1 cucharada de vinagre o cerveza

INSTRUCCIONES:
Para preparar los frijoles:
Se pueden utilizar frijoles enlatados, si es así escurridos y lavados.
Yo prefiero cocinarlos en la olla lenta. Para esto los cocino una noche antes.
Poner las 2 tazas de frijoles negros con 4 tazas de agua. Agregar sal y pimienta al gusto, y una hoja de epazote. Ponerlo a cocinar en bajo por 8 horas.
Cuando estén listos, quitarles el líquido, ponerlos en un tazón y apachurrarlos para formar un puré.
Para preparar las tortitas:
Poner el puré de frijoles en un tazón, agregar el pan molido, huevo, una pizca de sal y pimienta.
Combinar y separar haciendo las tortitas.
En un sartén con aceite a fuego medio, cocinar las tortitas por 5 minutos de cada lado, hasta que estén doradas.
Para preparar las cebollas caramelizadas:
En un sartén con aceite a fuego medio-bajo agregar las cebollas rebanadas y mover constantemente. Cuando empiecen a ponerse suaves agregue el azúcar y el vinagre o cerveza. Para que se adhieran los pedacitos cafés del sartén y para que las cebollas se caramelicen dejar por unos 20 minutos.
PARA SERVIR: Tostar los panes de hamburguesa, agregarle las tortitas de frijoles preparadas, las espinacas, las cebollas, y los condimentos deseados. Se puede acompañar con papas a las hierbas, papas fritas, camotes, o lo que guste.
