Cauliflower rice: a side dish or a full meal?

To reduce some of the carbs in your meals you can skip the rice and have cauliflower rice instead. It looks like the real thing, and tastes better that the real thing without the gilt of carbs.

The twist in this rice, was to add peppers and spice. This rice can be a side dish to another tasty dish or enjoy it as a full meal, either way is delicious.

Cauliflower rice

INGREDIENTS:

1 large head cauliflower separated into 1-inch florets

1 medium onion, chopped

2 tbsp oil

2 cup mushrooms, chopped

1 clove garlic, minced

1 large green pepper, chopped

2 leaves of parsley, chopped

1 chipotle in adobo sauce, chopped (optional for extra spice)

2 tbsp soy sauce

DIRECTIONS:

Boil the cauliflower florets in a pot for about 10 minutes so they get tender.

Add the cooked cauliflower florets in a food processor, to resemble rice appearance.

If you don't have a food processor, you can just chop it up in little pieces.

In a pan heat the oil to medium heat, add the garlic and onion. Cook for about 2 minutes stirring frequently to prevent burning.

Add the cauliflower, mushrooms, pepper, parsley and chipotle. Season with the soy sauce, and let it cook for about 10 minutes, stirring frequently.

To Serve:

Scoop the cauliflower rice into a bowl, and enjoy.
