A quick hearty salad

Salad is a good option on hot summer days. This black bean salad is a great option, since it's really good, fresh and makes you feel full. Also it is very easy to make, since it has very few ingredients but a lot of flavor. My husband loves salads, and I would make them all the time as I would pair it up with other dishes when he wasn't a vegetarian yet. Now, I try to also pair them up with other things, but also making them as if they were the main dish. Always trying to play around with different ingredients.

This salad could be paired up in a barbecue or for a quick bite. It is a salad that you can make from different left overs and it will give them a twist for a brand new dish.

Black bean salad

INGREDIENTS:

2 Cups black beans

10-15 cherry tomatoes, sliced

1 ripe avocado, cut in squares

1/2 jicama, chopped

1 tbsp olive oil

1 lemon, juice

1 tsp garlic salt

1-2 epazote leaves

1 tsp salt and pepper

DIRECTIONS:

For the black beans:

You can use canned beans, if this is the case drain and rinse them.

I prefer to prepare them in a slow cooker. To do this prepare them the night before.

Put 2 cups of dried black beans with 4 cups of water. Add salt and pepper to taste, and an epazote leaf. Put on low heat for about 8 hours.

When the beans are ready, drain them.

For the salad:

In a salad bowl place the black beans, cherry tomatoes, avocado, and jicama.

Add the lemon juice, olive oil, garlic salt, salt and pepper.

Mix the ingredients, and enjoy with tortilla chips.

Ensalada de frijoles negros

INGREDIENTES:

2 tazas de frijoles negros

10-15 tomates cherry, cortados

1 aguacate, cortado en cuadritos

1/2 jicama, cortada

1 cucharada de aceite de oliva

1 limon, jugo

1 cucharadita de sal de ajo

1-2 hojas de epazote

1 cucharadita de sal y pimienta

INSTRUCCIONES:

Para preparar los frijoles:

Se pueden utilizar frijoles enlatados, si es así escurridos y lavados.

Yo prefiero cocinarlos en la olla lenta. Para esto los cocino una noche antes.

Poner las 2 tazas de frijoles negros con 4 tazas de agua. Agregar sal y pimienta al gusto, y una hoja de epazote. Ponerlo a cocinar en bajo por 8 horas.

Cuando estén listos, quitarles el líquido.

Para preparar la ensalada:

En un tazon agregar los frijoles negros, tomates, aguacate y jicama.

Sobre esto agregar el jugo de limon, aceite de oliva, sal de ajo, sal y pimienta.

Mezclar los ingredientes, y listo. Se puede disfrutar con unas tostadas.
