Tacos with spice and flavor

Like I said before tacos can be basically a tortilla filled with anything you want. A taco is the most simple yet tasty food we have in Mexico. Also, one of the simplest thing to add to a taco is spice.

If you have a tortilla, a filler and a sauce or spice you have a taco.

Normally a taco is filled with some kind of protein, so in this case I went with a traditional garnish for meats or fish. So, I said why not do it without the protein, and here it is tacos al ajillo.

Garlic mushroom tacos

INGREDIENTS:

2 cups of mushrooms, sliced

8 cloves of garlic, minced

3 guajillo peppers (red dry pepper), chopped

1 tbsp olive oil

salt and pepper to taste

8 tortillas

INSTRUCTIONS:

In a pan heat the olive oil and add the garlic, get stirring to prevent burning for about 2 minutes.

Add the guajillo peppers and keep stirring for about 2 more minutes.

Add the mushrooms, season to taste with salt and pepper, and cook for about 10 minutes until they start to soften and brown.

TO SERVE:

Spoon the mushroom filler to a tortilla, and enjoy!! Easy and delicious!!

Tacos de champiñones al ajillo

INGREDIENTES:

2 tazas de champiñones, cortados

8 dientes de ajo, machacados

3 chiles guajillo, cortados

1 cucharada de aceite de oliva

sal y pimienta al gusto

8 tortillas

INSTRUCCIONES:

En un sarten con aceite, agregar los dientes de ajo, mover frecuentemente para evitar que se queme cocinando por 2 minutos. Agregar el chile guajillo y continuar mezclando para evitar que se queme y se amargue, por otros 2 minutos más.

Agregar los champiñones, y sazonarlos al gusto con sal y pimienta. Cocinar por unos 10 minutos, mezclando constantemente hasta que estos se empiecen a suavizar y dorar.

PARA SERVIR:

En una tortilla agregarle el relleno de champiñones y a disfrutar. ¡Fácil y rico!
