Salad for a hot summer day

Salad is a good option on hot summer days. This chickpea and nopales salad is a great option, since it's fresh and makes you feel full. Also it is very easy to make, since it has very few ingredients but a lot of flavor. Always is good to try to play around with different ingredients.
Chickpea and nopales salad

INGREDIENTS:
2 cups chickpeas
2 cups vegetable stock
3 sweet bell peppers (any color you prefer), chopped
1 cup of nopales, chopped
1 lemon, juice
1 tsp garlic salt
1 tsp salt and pepper
DIRECTIONS:
The chickpeas should be put in water overnight if they are from a bag, drain and rinse them. If they are from a can, drain and rinse them.
Add the chickpeas and vegetable stock to a pot. Season with salt and pepper. Bring to a boil, then lower the heat and let it simmer for about 15 minutes. Remove from heat and let if cool down.
In a salad bowl place the chickpeas, nopales and bell peppers.
Add the lemon juice, garlic salt, salt and pepper.
Mix the ingredients, and enjoy with tortilla chips.
Ensalada de garbanzos y nopales
INGREDIENTES:
2 garbanzos
2 tazas de caldo de verduras
3 pimientos dulces de colores (segun el color que guste), cortados
1 taza de nopales, cocidos y cortados
1 limon, jugo
1 cucharadita de sal de ajo
1 cucharadita de sal y pimienta
INSTRUCCIONES:
Los garbanzos deben dejarse una noche remojando si son de bolsa, si son de lata colar y lavar.
Agregar los garbanzos y el caldo de verduras en una olla. Sazonar con sal y pimienta. Llevar a hervor, bajar a fuego lento y cocinar por 15 minutos. Retirar del fuego y dejar enfriar.
En un tazon agregar los garbanzos, pimientos y nopales.
Sobre esto agregar el jugo de limon, sal de ajo, sal y pimienta.
Mezclar los ingredientes, y listo. Se puede disfrutar con unas tostadas.
